Human: Hare or Mouse
Elf: Squirrel
Dwarf: Mole
Hobbit: Vole(duh)
Orc: Flitcheye(hehe, i like that one)
Urak-ki: Stoat
Goblin: Ferret
Treebeard guys: Badgers

Those were some I thought that would fit pretty well
