I've only seen one magical girl transformation because I only watched episode one so far, but it's not a long change.

Do they have fights that are mostly just talking and flashbacks, with literally maybe 2 seconds of fighting before they stop and start talking and having flashback and with this fight taking up to 5 episodes with each episode promising that the next will have an epic fight but they never do?

Then rest assured, if they ever have any fights that's how they'll turn out. You may as well skip ahead a few episodes when it comes to a fight sequence.
