Value of building towers to defend against stunt doubles?

Would that be helpful to build a bunch of towers to keep the bots from killing you?

Towers are only as good as the army behind them. So yes - they can double your defense if you have a balanced army of all 4 troop types, but towers alone won't help you.

EDIT: not completely true - towers do give small defense without an army, but the bulk of the bonus they give comes from the army behind them, so alone they aren't very helpful.
